These easy puff pastry apple rings are such a simple and delicious apple dessert. Thin apple slices are wrapped in flaky puff pastry, then sprinkled with cinnamon and sugar before baking until golden and crisp.
I love recipes like this because they look beautiful but take very little effort. They are especially good served warm, with a scoop of vanilla ice cream. It’s an easy treat that makes the most of simple ingredients.

- Wash the apples and slice them horizontally into even, round discs, about ¼ inch thick. Remove the core from each slice to create apple rings. Mix the sugar and Ceylon cinnamon in a small bowl. Unroll the thawed puff pastry sheets and cut each sheet into long, thin strips, about ½ inch wide.
- Wrap each apple ring with a strip of puff pastry, placing the edges of the pastry strips next to each other without overlapping. Place the rings on a parchment-lined baking sheet. Whisk the egg with one tablespoon of water until smooth. Brush the puff pastry lightly with the egg wash, then sprinkle with the cinnamon-sugar mixture. Bake in a preheated 400°F (200°C) oven for about 20–25 minutes, or until the puff pastry is puffed and golden brown.
Notes
Make sure the holes in the apple rings are large enough, at least 1½ inches in diameter, so the puff pastry strips can easily be pulled through. Serve. Let the apple rings cool for a few minutes before serving. They are delicious warm, especially with vanilla ice cream.
