Summertime is here and the livin’ is easy again. The season brings some lightness and simplicity to the everyday. I feel so grateful to have more freedom and see more light and hope for the first time since the COVID-19 pandemic started.
My thinking and doing have shifted from dormant to curious and energized. I bought a few pieces of outdoor furniture in hopes of having visitors. My plans for entertaining are the lightest they have ever been which is reflected in the furniture choices: a coffee table and a free-standing umbrella surrounded by a few comfortable chairs.
We had a lot of rain and cooler weather around here and the garden is wild and green. The late afternoons are refreshing and very inviting. What a pleasure it is to sit outside, quietly and alone and let our thoughts wander. I love it.
Summer changes the way I cook. My food becomes lighter and less fussy. The season of roasting and slow cooking has passed. Time to make wraps, salads and no bake desserts.
Here are some of my latest favorites:
Broccoli Slaw with Sweet and Sour Vinaigrette
No Bake Cheesecake with Peaches
I hope this summer finds you in good spirits and looking forward to brighter days.
