- In a medium bowl, mix chia seeds, honey and coconut milk. Stir well and chill in the fridge for one hour or more. The mixture will thicken as the chia seeds become plump.
- While the chia pudding is setting, peel the mangoes. Using a blender, puree the flesh of two mangoes until smooth. Slice and dice the third mango, then set it aside.
- Prepare four glasses. Pour the mango purée evenly into the glasses. Top with the thickened chia pudding. Sprinkle with pieces of fresh mango and coconut flakes, if desired. Chill and serve.
