- Thoroughly wash one unpeeled lemon. Slice and set aside. Peel the ginger and slice thinly. In a small clean jar, place lemon slices one at a time, each covered with a couple of slices of ginger. When finished, pour the honey and 1 tbsp. of lemon juice. Cover with a lid and let rest in the refrigerator for 24 hours. The syrup will become watery. Shake well and serve with tea or plain hot or cold water.
When making a drink, 3-4 tsp. of syrup should be enough for one cup of liquid. Lemon slices can be added as well to enhance the flavor.
