This one is my favorite for the days when I crave eating light or when I am looking for a side dish that is elegant, pleasantly surprising with its elegant flavor, and fast to make.

- Clean and dry your zucchinis, then trim the ends. Place a zucchini on the cutting board, and make lengthwise slices about 1/2-inch thick, keeping one end intact. Cut the zucchini in half lengthwise, then place one half flat on the cutting board. Now, the slices should be horizontal. Slice the zucchini half lengthwise through the horizontal slices, leaving the strips attached to the uncut end. Carefully spread the strips apart, creating a fan shape.
- Crack two eggs into a large plate and beat them with a fork until smooth. Set aside. Place flour on a separate plate. In a large frying pan, heat up some vegetable oil over medium heat. Allow the oil to warm up before proceeding to the next step.
- Generously season both sides of your fanned-out zucchini with salt and pepper. Dredge the seasoned zucchini in flour, coating both sides. Dip the floured zucchini in the beaten egg mixture. Fry the zucchini in hot oil until it turns golden brown and is cooked through. Serve hot.
