Beet Salad
This is the best beet salad. Baked beets pair divinely with blue cheese or goat cheese, pistachios and parsley. Sprinkled with olive oil, balsamic vinegar and a dash of salt and sugar. Perfect served cold. Can be eaten alone or with any meat or fish.
