Peel and rinse the potatoes. Pat dry using paper towels.
In a medium non-stick frying pan heat the oil. Add potatoes and saute until golden on all sides.
Move the potatoes to the baking dish.
If making ahead, cool the potatoes and cover. Keep them in the fridge until you are ready to roast them.
To roast right away, put small pieces of butter on top of most of the potatoes and bake in the 375 F oven for 30-45 min.
To check for readiness insert the tip of a knife into one of the potatoes. The inside should feel very soft.
