  • 4 large eggs (Room temperature.)
  • 1 cup of sugar
  • 1 cup of neutral vegetable oil
  • 1 1/2 cup all-purpose flour
  • 1 1/2 tsp baking powder
  • 1 can/15oz/425g (Sliced peaches in juice, not syrup.)
  • confectioners sugar (For dusting.)
Instructions
  1. Preheat oven to 350 °F. Prepare a 9×11-inch pan by coating it with vegetable oil and lining with parchment. Whip eggs and sugar until frothy and light in color. Mix in oil and vanilla. Combine flour and baking powder, then blend into the egg mixture. Transfer batter to pan, top with peaches. Bake 55–60 mins, until golden and set (toothpick comes out clean).
