  • 1 can unsweetened coconut milk (Almond milk can be used instead.)
  • 1-2 tbsp maple syrup
  • 5 tbsp chia seeds
  • 1 cup pumpkin purée
  • tbsp maple syrup

  1. In a medium-sized bowl, mix coconut milk, 1–2 tablespoons of maple syrup, and chia seeds. Refrigerate the mixture for 1 hour. Combine pumpkin purée and 1 tablespoon of maple syrup. Pour it into individual serving dishes, filling each about a quarter of the way. Top the purée with the previously prepared chia pudding, ensuring an even layer. Chill the desserts in the refrigerator until set, then serve and savor! I used 1/2 cup capacity dishes for this recipe, which gave me 6 servings. This size works well for sharing or having a few desserts ready in the fridge.
