Ingredients
  • 1 large bunch of Swiss chard, leaves and stems
  • about half a pound/200g spinach (Frozen.)
  • 3 tbsp olive oil
  • 1 shallot or 1 small onion
  • 2-3 cloves garlic
  • 7oz/200g feta cheese
  • 2 tsp dried oregano
  • salt and black pepper (To taste.)
Instructions
  1. Preheat the oven to 360°F/ 180°C. Wash the Swiss chard and spinach thoroughly. Separate the chard stems and leaves. Chop the stems into about 1 cm pieces and roughly chop the leaves and spinach. Transfer to an ovenproof dish. Add finely chopped onion and garlic, then pour in 2 tablespoons of olive oil. Mix well with your hands.
  2. Place the block of feta on top. Sprinkle with oregano, season generously with freshly ground black pepper, and drizzle with the remaining olive oil. Bake for 30-40 minutes. Remove from the oven. Mash the feta and mix it thoroughly with the greens. Serve mixed with pasta or grains, or let it cool slightly and use as a filling for dumplings.
