Herring Salad

Today, let's dive into a tasty herring salad recipe!  This small fish is widely appreciated in European diets. Herring boasts omega-3s, vitamin D, protein, and B vitamins. While it's not super popular everywhere, you can now easily find herring in oil at your local supermarket, often in the kosher section. Herring salad is a fantastic option for holiday meals or a unique potluck dish. It's easy to prepare and uses common ingredients like pickles, peas, apple, and leek. Soak the herring in water or milk for an hour to reduce saltiness, and briefly blanch the leeks to soften their flavor. Simply chop the ingredients, season, and enjoy a balanced salad perfect for sandwiches or paired with toasted bread.

Ingredients
  • 6 herring fillets in oil (500g/1.1 lb.) (Matjas type.)
  • 1 large leek (White part only, sliced.)
  • 1/2 large apple (Cut into bite-sized strips)
  • 4 pickled cucumbers (Cut into bite-sized strips.)
  • 1 can of green peas (Drained.)
  • Dressing
  • 3 heaping tbsp. of mayonnaise
  • 2 heaping tbsp. of sour cream
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 1 tbsp chopped dill
  • salt and pepper to taste
  • 1-2 tsp sugar (To balance salt and acid.)
Instructions
  1. Soak the herring fillets in cold water or milk for 1–2 hours to reduce saltiness, then drain and cut them into strips. Slice leek into thin rings or half-moons and blanch in boiling water to soften its sharp flavor. Drain thoroughly. Chop apple and pickles into thin strips. Drain canned peas. Mix mayonnaise, sour cream, mustard, vinegar or lemon juice, and chopped dill to create the sauce. Season with salt, pepper and, sugar. In a bowl, combine herring, leek, peas, apple, pickles, and parsley. Toss with the prepared sauce.
