Farmer’s Cheese Cookies

Ingredients
  • 2 cup all-purpose flour
  • 1 pinch of salt
  • 2 stick plus 1 tbsp unsalted butter (About 250g.)
  • 1 cup (packed) farmer's cheese (About 250g.)
  • 1 tsp vanilla extract
  • 4 tbsp sugar
Instructions
  1. In a large bowl, combine the flour and salt. Add the cold butter and rub it into the flour until the mixture resembles coarse crumbs. Add the farmer's cheese and quickly knead into a smooth dough. Do not overwork the dough. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  2. Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper. Roll the chilled dough to about ¼ inch (5 mm) thick. Cut the dough into circles or squares. Sprinkle each piece generously with the granulated sugar. Fold each cookie in half or into triangles, then place them on the prepared baking sheet.
  3. Sprinkle the tops with a little more sugar. Bake for 20–25 minutes, or until the cookies are lightly golden and the sugar has caramelized slightly. Transfer to a wire rack and let cool slightly before serving.
