  • 1 large broccoli head (About 1 to 1¼ pounds, cut into florets.)
  • 10-15 cherry tomatoes (About 250g/9oz, cut in half.)
  • 1 cup sweet corn
  • 5-6 radishes
  • 2 hard boiled eggs (optional) (Quartered.)

  • Garlic dressing
  • 150 g plain greek yogurt or natural yogurt (About 1 small container.)
  • 2 tbsp mayonaise
  • 1-2 cloves garlic (Minced.)
  • 1 tbsp chopped dill or chives
  • salt and pepper (To taste.)
Instructions
  1. Cut the broccoli into florets and cook them in salted boiling water for 3–4 minutes, until just tender but still crisp. Drain immediately and rinse under cold water to preserve the bright green color. Slice the cherry tomatoes in half (or quarters if large). Thinly slice the radishes. Drain the sweet corn. If using eggs, boil them until hard, peel, and cut into large pieces.
  2. In a small bowl, whisk together the yogurt, mayonnaise, garlic, lemon juice, salt, pepper, and chopped dill or chives. Arrange the broccoli, tomatoes, radishes, corn, and eggs on a serving platter or combine everything in a large bowl. Drizzle with the garlic dressing just before serving, or serve the dressing on the side.
