Green Split Pea Soup

Ingredients
  • 6 oz smoked kielbasa (Cut it in half lengthwise and slice thin. )
  • 1 medium onion (Diced small.)
  • 3-4 cloves garlic (Minced.)
  • 2-3 tbsp neutral vegetable oil (Safflower seed oil works great.)
  • 1/2 tsp marjoram
  • 1/2 tsp oregano
  • 6 cup water
  • 1 tbsp seasoned vegetable base (Better than Bouillon brand is great. This could be substituted using vegetable bouillon cubes (1-2) depending on size.)
  • 1 cup dried split green peas
  • 2 tbsp long grain rice
  • 1 large carrot (Diced small.)
  • 2 celery ribs (Diced small.)
  • 1 medium potato (Diced.)
  • salt and pepper (To taste.)
Instructions
  1. In a large soup pot add oil and kielbasa, sauté until it starts to brown. Add onions, marjoram, oregano and continue cooking until onions are soft. Add garlic. After 1 min. add water, vegetable base, green split peas, rice, celery and carrot. Bring to a boil, reduce flame, cover and cook for about 15 min. Add potato, continue cooking for an additional 5 min. Season with salt and pepper. The soup is ready when the peas are starting to fall apart.
Recipe Notes

To add more richness and a hint of extra flavor, finish the soup with butter. After you turn the flame off, drop one tbsp. of butter cut into chunks. Cover and wait until it dissolves. Stir and serve.
