Instructions

In a large soup pan warm up oil and add diced onions. Season them with salt and cayenne pepper and saute until soft and translucent. Add ginger, coriander and turmeric and continue sauteing for an additions 30 sec.

Add water and split peas. Bring to a boil, lower the heat and cover. Cook for about 20min. or until split peas are starting to fall apart. Add spinach and cook until wilted. Add coconut milk and continue simmering for about 5min. or at least until the soup boils again. Turn off the heat and finish with pieces of butter. Serve alone or with lemon wedges.
