Carrot Soup with Ginger

Ingredients
  • 1 lb carrots (peeled and sliced into 1/2 in circles)
  • 1 stick unsalted butter (40z/113gr.)
  • 1 onion (medium size, roughly chopped)
  • 3 tbsp long grain rice
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 tbsp freshly grated ginger (peel the ginger first)
  • 3 cup water (chicken broth can be used but will change the taste of this soup a little)
  • croutons or chives for garnish
Instructions
  1. 1. On a medium flame sauté onions in butter until translucent and soft.
  2. Add carrots and season with salt. Sauté for additional 5min.
  3. Add water, rice and sugar.
  4. Lower the flame and simmer the soup for 15min. or until carrots are soft and rice is well cooked.
  5. At the the end of cooking add fresh ginger.
  6. Purée the soup using blender. Adjust seasoning and enjoy.
