bunch of broccoli(Crowns separated and cut into small chunks. Trunks skinned and shredded.)

Better than Bouillon Seasoned Vegetable Base(Vegetable bouillon cubes will work as well. Use 1 or 2 depending on size.)
salt and pepper(To taste.)
Instructions
In a large soup pot add onion and butter. Saute until soft and translucent. Add celery and leeks, continue cooking for an additional 2min.
Add water, vegetable bouillon, shredded carrot, shredded broccoli stems and bring to a boil. Add pieces of Laughing Cow Cheese, stir and cook until all the cheese pieces dissolve. Lower the heat.
Add broccoli crowns and potato. Cook for an additional 10 min. or until broccoli becomes soft but not mushy.
Recipe Notes
For more flavor and to use all the vegetable parts, using a cotton thread, tie the green parts of leeks and throw them into the soup at the beginning of cooking. Remove when the soup is cooked.
